DESCRIPTION

The Uncinate Truffle, scientifically known as Tuber Aestivum var. Uncinatum Chatin, is closely related to the Summer Truffle (Tuber Aestivum). It is distinguished by its darker gleba, which turns chocolate-colored when fully mature, and a peridium with non-transversely striated warts.

This truffle thrives in cool, humid environments, particularly in beech and oak forests, at higher altitudes where it is protected from direct sunlight. It matures in autumn, from October to December, growing in clay-rich or humus-rich soils.

  • Harvesting period: From October 1 to March 15.

SECOND CHOICE CLASSIFICATION

The Second Choice category includes whole truffles ranging from 5 grams (0.18 oz) to 12 grams (0.42 oz). These truffles may have irregular shapes and more visible surface imperfections, but their intrinsic quality and aromatic profile remain unchanged.

STORAGE

Truffles are highly delicate ingredients. They should be stored in a cool place for a short period (maximum 7-10 days), wrapped in breathable gauze, and sealed in a glass jar.


BEFORE CONSUMPTION

Before consuming the truffle, ensure it is thoroughly cleaned of all soil residues. Rinse it gently and use a semi-soft bristle brush or a small brush to remove any remaining dirt.
